For every mash into the mash tunt For every mash into the mash tun it was used 425 kg of crushed malted barley and 1,900 litres of hot water. From that we gain 1,600 litres of wort (sugar flavoured liquid) into the 2,000 litre Fermenter for fermentation. You need extra space for the yeast to foam up. From that 1,600 litres of wort which ferments into 9% or 10% ABV wash, we yield around 200 litres of caskable spirit. This rule is typical in whisky production. However it would be typical to distill all of wash in one run through the large wash still and then the smaller spirit still, but as it is considered to only have a 1,000 litre wash still and 500 litre spirit still, we run half of our wash (i.e. 800 litres) one day and the other 800 litres of wash through the wash still the next day.
The 200 litres of caskable spirit (new make spirit) is around 60% ABV, thus is (200 litres x 0.6) = 120 litres of pure alcohol (LPA) per mash. So, for every mash that we do we gain 120 LPA through a 1,000 litre wash still and 500 litre spirit still. If we then did five mashes per week, 5 mashes x 50 weeks per year we would get (5 mashes x 120 LPA x 50 weeks) 30,000 LPA. AGING WHISKY: To smooth your whisky or bourbon, we recommend our used barrels of Genuine Port Wine, collected from the vineyards of the Douro Valley .
